- 120ml olive oil for frying, or as needed
- 120ml prepared tomato sauce
- 60g fresh mozzarella, cut into small cubes
- 60g chopped fresh basil
- 60g grated provolone cheese
- 10ml olive oil
How To Make Chicken Parmesan?
- Preheat the oven: Heat your oven to 230°C (450°F).
- Prepare the chicken: Place chicken breasts between plastic wrap and pound to ½-inch thickness. Season with salt and pepper. Coat both sides with flour.
- Make the coating: Beat the eggs in one bowl. Mix breadcrumbs and 50g Parmesan cheese in another.
- Coat the chicken: Dip each chicken breast in the egg, then coat in the breadcrumb mixture. Let the chicken rest for 10-15 minutes.
- Fry the chicken: Heat 120ml olive oil in a pan. Fry the chicken for about 2 minutes on each side until golden. It will finish cooking in the oven.
- Assemble: Place the chicken in a baking dish. Top with 2 tbsp of tomato sauce, mozzarella, basil, provolone, and the remaining Parmesan. Drizzle with 2 tsp olive oil.
- Bake: Bake for 15–20 minutes until the cheese is melted and bubbly, and the chicken is cooked through (internal temp should be 74°C or 165°F).
Recipe Tips:
- Pound the chicken evenly: Pound the chicken breasts to a ½-inch thickness so they cook evenly.
- Let the chicken rest: Let the breaded chicken sit for 10-15 minutes before frying to keep the coating crispy.
- Use a thermometer: Check the chicken with a thermometer to ensure it reaches 74°C (165°F) inside.
- Fry in hot oil: Make sure the oil is hot enough to get a crispy coating.
- Customize the cheese: Mix different cheeses like mozzarella and provolone for extra flavor and melt.
How To Store & Reheat Leftovers?
- Refrigerate: Let the leftover Chicken Parmesan cool to room temperature. Then, store it in an airtight container in the fridge for up to 3 days.
- Freeze: After cooling, put the chicken in an airtight container or freezer bag and freeze for up to 3 months.
- Reheat: Heat a bit of olive oil in a pan on medium heat. Add the chicken and cover. Heat for 5–8 minutes, flipping once until hot.
