  • 80ml cognac, dry sherry, or brandy
  • 120ml heavy cream

How To Make Steak Au Poivre Recipe?

  1. Season the Steaks: Pat steaks dry, season with salt and pepper, and let rest for 15–30 minutes.
  2. Crush the Peppercorns: Crush peppercorns until coarse.
  3. Cook the Steaks: Heat oil in a skillet over medium-high. Cook steaks for 3 minutes per side until brown. If they have fat, cook the sides too.
  4. Add Garlic, Thyme, and Butter: Lower heat. Add garlic, thyme, and 1 tbsp butter. Baste steaks and cook until they reach 120°F (49°C), about 2 minutes. Rest the steaks for 10 minutes.
