Gordon Ramsay’s smoked chicken mango salad is the mango, avocado and smoked chicken salad from Healthy Appetite (2008). Thin slices of mango go down first, then strips of avocado and smoked chicken, with a neat pile of salad leaves in the middle. An orange, lemon and wholegrain mustard dressing goes over the top. It serves 4 and takes about 20 minutes.
There’s no real cooking, only a few minutes to toast the pine nuts if you use them. The rest is slicing and building it in layers, plate by plate.
Smoked chicken turns up in several of his books. He likes it with arugula in a bagel in Makes It Easy, and in Kitchen Heaven he buys it ready-made from the deli for his bang bang chicken.

kcalGordon Ramsay’s smoked chicken mango salad recipe from Healthy Appetite (2008), page 83, with sliced mango, avocado and smoked chicken under a pile of leaves and an orange mustard dressing. These ingredients make a mango and avocado chicken salad for 4.
Ingredients
- For the salad:
2 medium mangoes, firm but ripe
2 ripe avocados
a squeeze of lemon juice
300 to 350g (10½ to 12 oz) smoked chicken breasts
200g (7 oz) mixed salad leaves, such as arugula, mâche, baby chard or amaranth
2 tablespoons pine nuts, toasted (optional)
- For the dressing:
2 tablespoons orange juice
2 tablespoons lemon juice
1 tablespoon wholegrain mustard
2 tablespoons extra virgin olive oil
2 tablespoons avocado oil (or olive oil)
sea salt and black pepper
Directions
- Toast the pine nuts: If you’re using them, toast them in a dry skillet over medium heat until golden, then set aside.
- Slice the mangoes: Peel them and cut the flesh away from the stone in thin slices. Arrange the slices on 4 plates.
- Add the avocado: Halve the avocados, remove the stones, peel off the skin and slice the flesh into strips. Squeeze over a little lemon juice to stop it browning, then lay the strips over the mango.
- Add the chicken: Cut the chicken into thin slices and divide it between the plates. Neatly pile the salad leaves in the middle.
- Dress and serve: Whisk the dressing ingredients together and season with salt and pepper. Spoon it over the salad and top with the pine nuts if you like.
Notes
- Calories are about 450 a serving with the pine nuts. Most of them come from the avocado and the oils in the dressing.
FAQs
Can I pack it for lunch?
Yes, and the book says how. Pack the dressing and the salad in separate containers and only combine them just before you eat.
If you’re using the pine nuts, pack them on their own and scatter them over at lunch, so they stay crunchy.
Can I use regular cooked chicken instead of smoked?
Yes. In Cooking for Friends he turns another salad into a main course with either cold smoked chicken or leftover roast chicken, so the two do the same job.
For a warm version with crisp skin, there’s the chicken salad Gordon Ramsay makes with poached and pan-fried breasts.
Can I make it with prawns instead?
He has a version for two in Makes It Easy, page 206. He stir-fries 12 raw tiger prawns with ginger and garlic for 2 to 3 minutes, until pink, then adds lime juice and diced mango.
The avocado slices go around the outside of the platter with lemon juice. Half the mango is blended into a purée and drizzled around the edge.
Which salad leaves should I use?
The book suggests arugula, mâche, baby chard or amaranth, or a mix of them.
Mâche is also sold as lamb’s lettuce or corn salad. Red amaranth leaves are small and add color to the pile in the middle.
What other mango salads does Gordon make?
Healthy Appetite has a starter on page 235: 1 large mango sliced thin with 200g of watercress and 75g of raspberries. The dressing is raspberry vinegar and olive oil with a pinch of sugar.
For breakfast, mango goes into his tangy fruit salad with pineapple, apple, pear and cucumber in a tamarind and chili dressing.
